Cow Pie Cookies

A simple, easy and quick recipe that makes a really good chocolate cookie. They are cake-like in texture, with the crunch of walnuts,the creaminess of chocolate chips and the deep chocolate flavor of cocoa powder.

1/2 cup room temperature butter 1/2 cup brown sugar 1/4 white sugar 1 large egg 1 tsp pure vanilla extract 1 cup all-purpose flour 1/4 cup cocoa powder 1/2 tsp baking powder 1/8 tsp salt 1/2 cup walnut pieces 1/2 cup chocolate chips

Preheat oven to 350 degrees. In a large bowl, beat together butter and sugars until smooth. Add the egg and vanilla and beat well. In a separate bowl combine flour, cocoa powder, baking powder and salt. Slowly add flour mixture to the sugar and egg mixture, mix until well blended. Fold in walnuts and chocolate chips. Drop spoonfuls of batter onto greased cookie sheet, and bake at 350 degrees for 8 to 10 minutes. Let cookies cool on baking sheet for 5 minutes before removing. Substitute unsalted, dry-roasted peanuts instead of the walnuts for a great taste variation. Cocoa powder is cocoa solids minus the cocoa fat or cocoa butter.

Cocoa solids hold all the chocolate flavor, are low in calories and carry all of the beneficial antioxidants that have been found to help prevent many diseases. The solids and fat are separated by pressing, which can lead to an acidic taste tin the chocolate. Solids that have been produced by the Dutch process are less acidic and have the traditional brown color associated with chocolate.

Delicious served with steamy cup of cappuccino or as an elegant accompaniment to creamy desserts after dinner, this cookie-dessert recipe is easy to make in advance and keep for serving at any festive occasion.

How to Make Chocolate Cigars

Rather like brandy snaps, these delicate biscuits are wrapped around spoon to achieve their cigar shape.

Preparation time: 20 minutes plus extra for setting

Cooking time: 4 minutes each batch

Makes 16

Ingredients:

2 tablespoons plain flour

2 oz/ 50 g caster sugar

1 egg white

2 tablespoons double cream

1 tablespoon cocoa powder

1 oz/25 gm unsalted butter, melted

5 oz/ 25 gm chocolate, broken into pieces

Method of Preparation

1- Line 4 baking sheets with non-stick baking parchment

2- Whisk egg white and sugar together till well blended. Sift flour and cocoa powder into the bowl and stir in the cream and butter.

3- Place 4 dessert spoons of the mixture on one of the baking sheets. Space well apart and spread lightly with the back of a spoon.

4- Bake in a preheated oven 220 C for about 4 minutes till the biscuits have spread and the edges are beginning to darken.

5- Remove from the oven and leave for 30 seconds. Using a palette knife, carefully lift each biscuit from the paper and wrap them round the handles of wooden spoons till they set into shape.

6- Carefully twist the biscuits off the spoons and transfer them to a wire rack. Repeat with the remaining mixture on the remaining baking sheets.

7- Melt the chocolate on a double boiler and dip one side of each biscuit into it, letting the excess chocolate drip back into the bowl. Leave the biscuits on a sheet of greaseproof paper until they are set.

8- Store in an airtight container till ready for use.

9- Serve standing in a bowl.

Ruth Wakefield of the Toll House restaurant is credited to be the first person to bake a chocolate chip cookie as we know it today. The chocolate chip cookie arose because she was actually a little bit lazy. Ruth decided to throw in small chunks of chocolate into her cookie mix assuming it would melt (and therefore produce drop cookies she was aiming for).   Ruth assumed the chocolate would melt and nobody would know the difference. For Ruth, it was a shortcut that really paid off. Her customers loved the chocolate chip cookie and the 'Toll House Cookie' was born. Nestle later bought the trademark.

What You Need

½ cup sugar ½ cup brown sugar ½ cup softened butter or margarine ½ cup peanut butter ½ teaspoon vanilla flavoring 1 egg 1 ½ cups flour 2 cups miniature marshmallows 1 cup chocolate chips

How to Make It

Soften the butter or margarine before preparing this recipe by setting it out onto the counter about 20 minutes before you begin.

Preheat your oven to 375 degrees Fahrenheit.

Using a large mixing bowl and an electric mixer you will add the sugar, brown sugar, softened butter or margarine, peanut butter, vanilla flavoring and the egg. Cream ingredients together until well blended.

Gradually add the flour and combine well.

Press this mixture evenly onto a 12 or 14 inch pizza pan or baking sheet. Gently pinch up the edges as your work around the pan to create the rim around the crust.

Place in the preheated oven to bake for about 10 minutes and then remove from heat.

Sprinkle the miniature marshmallows and chocolate chips over the top of the crust. Return to the hot oven to bake for about 15 to 18 minutes or until the marshmallows become puffy and reaches a light golden brown in color.

Remove from oven and allow the pizza to completely cool before you cut it into individual size wedges or squares. You may also want to place it in the refrigerator to chill overnight or for 2 to 3 hours before cutting and serving.

The following recipe makes seventy of these little treats, which might sound like a lot but they do keep well for up to a week if you keep them in a tightly sealed container. The vanilla and chocolate are amazing together and the cinnamon adds a distinctive Mexican touch, which is great if you are looking for exciting Cinco de Mayo recipes to make for the kids.

What you will need:

4 egg whites 1/8 teaspoon ground cinnamon 1/8 teaspoon salt 3 oz chopped semisweet chocolate 1/2 cup white sugar 1/4 teaspoon cream of tartar 1/2 teaspoon vanilla extract

How to make them:

Preheat the oven to 300 degrees F. Grease a pair of baking sheets. Grind the chocolate in a food processor, and then sift it through a sieve so that no pieces will be able to block the tip of a pastry bag. Beat the egg whites with the vanilla, salt, and cream of tartar until they form stiff peaks.

Add them to the chocolate and keep beating them on a medium speed. Add the sugar and cinnamon gradually. Pipe this mixture, a teaspoon at a time, on to the prepared baking sheets.

Bake them for half an hour or until they are starting to brown and come away from the baking sheets. Let them cool on racks and keep them in an airtight container for up to a week. You can serve these little snacks with ice cream or whipped cream. They are also nice served alone or with a glass of milk or cup of coffee. Just try to eat only one - it is nearly impossible! These are so good you will want at least two!

Two large eggs

Two and one fourth cups flour (all purpose works well)

Directions:

Preheat your oven to three hundred and seventy five degrees Fahrenheit. While the oven is pre-heating, mix together one teaspoon of baking soda, one teaspoon of salt and two and one fourth cups of flour together in a small bowl. In a large bowl, beat together the one cup (or two sticks) of softened unsalted butter together with three fourths cups of white sugar, the three fourths of a cup of brown sugar and the teaspoon of vanilla flavoring (or extract). Beat the ingredients together until they are creamy.

Once you have made a creamy mixture add the eggs one at a time and make sure they get beaten in thoroughly before adding in the flour mixture. Slowly add in the flour, salt, baking soda mixture until you have formed a slightly firm and smooth cookie dough. Stir in the chocolate chips (most easy chocolate chip cookie recipes recommend two cups' worth, but you can add as much or as little as you want). Next, use a teaspoon to drop blobs of cookie dough onto cookie sheets. Make sure the drops are a couple of inches apart and then bake each sheet for nine to ten minutes at a time. Cool the cookies for ten to fifteen minutes after they are taken out of the oven.
